Pomegranates and Orange Salad Recipe

Orange salad with pomegranates comes from North Africa, a place known for its creativity to treat pomegranate. It is completely fantastic with its amazing flavors variety, the acerbity of pomegranate fruit. All its ingredients give a dynamic visual note to the overall appearance of the salad.

Ingredients Required:
1 cup red onion slices—Cut, paperthin, broken in strips
½ cup lemon juice
6 large Valencia oranges
Fresh ground black pepper as per taste
5 tbs. extra virgin olive oil
2 tbs. Pomegranate vinegar
1 medium size or 1 cup cucumber, pared and diced
1-cup pomegranate arils
4 oz. or 1-cup black oil-cured olives,
Moroccan Salt as per taste
1 tbs. fine chopped mint

The Method:
Start about 1 hour before. Keep onion slices in a bowl. Marinate them in lemon juice. Lemon is crucial to remove the pungency of raw onion and make it pink in color.

Peel the oranges and cut in thin and round slices with a sharp knife. Cut the rounds half in size and pick out the seeds. Infusion of onion is an important feature of the recipe, so you must do it carefully.

Put the oranges in a large bowl. Run out onion out of the liquid. Add onion in oranges. Disperse mixture with pepper.

Add oil and vinegar to make vinaigrette. Pour it on oranges. Cover the bowl and keep it aside in a cool place to instill for about 30 minutes. Put in pomegranate arils, cucumber, and olives. The saltiness of the olives adds a different flavor altogether.

Set seasoning and spread out mint over top. Serve well decorated.

Beverage Suggestion:
For a nice beverage, the rose and blush wines are a good choice. The fruity, spicy, and acidic components of this salad will taste superb with such wine. American white Zinfandels is a good option.
